The Santorini Wines They are unique in the sense that, without fresh water supply and in the midst of an arid environment and hot wind for much of the year, the vines are cultivated in a particular way.
The plants Rarely exceed a metre high and irrigation is administered to most of the vineyards is obtained from the distillation of the morning Dew. The moisture is absorbed by the volcanic pumice embedded in the lava rock.
